1Peel and halve or quarter the parsnips and carrots so that the pieces are of a similar size.parsnips: 500 g, carrots: 500 g

2Heat the olive oil in a large sauté pan , then add the carrots and parsnips and toss to coat in the oil.olive oil: 3 Tbsp

3Add the thyme , cinnamon broken in two, star anise and some seasoning.thyme: 2 sprigs, cinnamon: 1 stick, star anise: 3

4Cook over a medium heat for 15 to ⏱️ 20 minutes , turning the vegetables frequently, until golden brown and almost cooked through.

5Drizzle over the clear honey and cook until the vegetables start to caramelize.clear honey: 2 Tbsp

6Deglaze the pan with the water and increase the heat.water: 1 splash

7Cook for 2 to ⏱️ 3 minutes , until the liquid has evaporated, and the carrots and parsnips are cooked through.

8Stir through a few knobs of butter to glaze.butter
